Waldorf Salad Recipe with Brown Rice
This tasty waldorf salad recipe includes classic ingredients mixed in with brown rice. The fresh apples and celery give it a nice crunch, while the walnuts and rice provide a smoother texture. I like to serve this at dinner parties and potlucks. It travels well and can be made ahead.

Waldorf Rice Salad Serves 4
1 cup brown rice, uncooked 2 medium apples, cored and diced (not peeled) 2 tablespoons lemon juice ½ cup chopped celery ½ cup chopped walnuts ½ cup raisins or tart cherries 1/3 cup canola mayonnaise ¾ cup plain yogurt 1-2 tablespoons honey (depending on how sweet you like it) ¼ teaspoon vanilla mixed salad greens(optional)
Prepare rice according to the package directions. Let cool. Place the apples in a large bowl and toss with lemon juice. Add in the rice, celery, nuts, and raisins. Toss to combine. In a separate bowl, combine the mayonnaise, yogurt, honey, and vanilla. Blend well. Fold it into the rice mixture. Serve over salad greens, if desired. Note: I have made this salad up to 2 days in advance and it keeps nicely in an airtight container in the fridge.
