Grandma's Turkey Soup Recipe
This turkey soup recipe is great old-fashioned soup that comes together in a snap. It is a wonderful meal for a cold winter night when you need to warm up. I have also used this recipe the day after Thanksgiving to use up all the leftover turkey. The milk in this soup gives it a wonderful creamy texture that will have your family and friends coming back for more. This is also really nice with some whole wheat rolls to soak up any left over soup.
EXTRA NUTRITION IDEAS: Feel free to add some of your favorite veggies. The vegetables that we like the best in this are green beans, corn, and even spinach.
Grandma's Turkey Soup Serves 8-10
1/4 cup butter 1 cup chopped green onion 2 cups sliced carrots 1/4 cup whole wheat flour 5 cups turkey broth, divided 2 cups milk (I like 2%) 1/2 teaspoon sea salt 1/2 teaspoon seasoned salt 1/2 teaspoon black pepper 1/8 teaspoon cayenne pepper 1 teaspoon dried parsley 3 cups chopped cooked turkey 8 ounces whole grain noodles (I like egg noodles or spirals)
In a large saucepan, saute the onions and carrots in butter until soft, not brown. Add the flour and mix well. Gradually add 2 cups broth and milk. Cook and stir the soup until it thickens. Stir in the remaining 3 cups broth,and all remaining ingredients. Simmer 10-12 minutes until noodles are tender, stirring occasionally.
