Thai Tilapia Recipe

NOTE: The only kink in this 30 minute meal is the brown rice. So either cook the rice the day before, or start it 30 minutes before you start the rest of the meal.
Thai Tilapia Recipe 30 minute meal
SERVES 4
1 teaspoon dark sesame oil, divided 1 teaspoon olive oil, divided 2 teaspoons minced fresh ginger 2 garlic cloves, minced 1 cup finely chopped red bell pepper 1 cup chopped green onion 1 teaspoon curry powder 2 teaspoons red curry paste 1/2 teaspoon ground cumin 4 teaspoons liquid aminos (see note) 1 tablespoon unrefined sugar 1/4 teaspoon salt 1 (14 ounce) can light coconut milk 2-4 tablespoons chopped fresh cilantro (depending on how much you like cilantro) 4 (6 ounce) tilapia fillets 3 cups hot cooked brown rice 1 lime (cut in 4 wedges)
Preheat the broiler. In a large saucepan, heat 1/2 teaspoon sesame oil and 1/2 teaspoon olive oil to medium heat. Add the ginger and the garlic. Saute for 1 minute. Next add the peppers and the onions and cook for 1 more minute. Stir in the curry powder, curry paste, and cumin. Cook for 1 minute. Add the liquid aminos, unrefined sugar, and coconut milk. Bring to a simmer, but do not boil. Remove the pan from the heat and stir in the cilantro. Meanwhile, brush the tilapia fillets with the remaining sesame oil and olive oil. Season with the 1/4 teaspoon salt and place on a baking sheet that has been oiled or coated with cooking spray. Broil for 7 minutes or until the fish flakes with a fork. Serve the tilapia with the curry sauce, hot rice, and lime wedges.
Note: Liquid Aminos is a great substitute for soy sauce. You can find it in most health food stores. If you still want to you regular soy sauce, try to get one that is low in sodium.
