oatmeal

This delicious oatmeal recipe is a favorite breakfast dish in our house. It's packed with flavor and nutrition. What a great way to start your day. We also like switching up the add-ins for a little variety. Here are just a few ideas to try if you are looking for something different.

Add-in Ideas:
  • chopped dried figs, apricots, dates, cranberries or raisins
  • sliced almonds, chopped pecans, sunflower seeds or pumpkin seeds
  • 1 teaspoon of vanilla
  • 1/2-1 teaspoon of cinnamon
  • 1 tablespoon flax meal
  • fresh fruit: blueberries, raspberries, sliced banana, or strawberries

Apple Walnut Oatmeal Recipe

1 cup rolled oats*
2 cups water*
1/8 teaspoon salt
1 cup diced apples
1/3 cup chopped walnuts or pecans
2 tablespoons finely chopped crystallized ginger (optional)
1-2 tablespoons honey (depending on how sweet you like it)
cinnamon (for sprinkling)

Place the oats, water, and salt in a medium saucepan. Bring to a boil, stirring occasionally.
Reduce heat to low and simmer until thick and creamy, about 15 to 20 minutes. Remove from heat.
Stir in the diced apples, walnuts, ginger and honey. Pour the oatmeal into serving bowls and lightly sprinkle with cinnamon. Serve immediately.

*Liquid Variations:

  • You can use cow’s milk or soymilk, in place of the water, for a creamer texture. Just be careful not to let the milk scorch on the bottom of the pan. You can prevent this by stirring often.
  • You can also use two cups of steeped green tea instead of water to add in some extra antioxidants.

*Alternative to rolled oats:
You can use quick cooking oats if you need to make breakfast in a hurry. Simply decrease the cooking time to about 10 minutes.
