Tasty Apple Walnut Oatmeal Recipe (the fast version)
This delicious oatmeal recipe is a favorite breakfast dish in our house. It's packed with flavor and nutrition. What a great way to start your day.
The Fast Version: This recipe is the fast version because it calls for quick cooking oats instead of rolled oats. The original recipe is in the weekend luxuries section, since it takes just a little bit more that 20 minutes to fully cook. I think both versions are great. It all comes down to how much time you have to devote to breakfast.
Mix It Up If you like this recipe, but want a little variety, try some of these tasty alternatives.
Add-in Ideas: - chopped dried figs, apricots, dates, cranberries or raisins
- sliced almonds, chopped pecans, sunflower seeds or pumpkin seeds
- 1 teaspoon of vanilla
- 1/2-1 teaspoon of cinnamon
- 1 tablespoon flax meal
- fresh fruit: blueberries, raspberries, sliced banana, or strawberries
Apple Walnut Oatmeal Recipe
1 cup quick cooking oats 2 cups water* 1/8 teaspoon salt 1 cup diced apples 1/3 cup chopped walnuts or pecans 2 tablespoons finely chopped crystallized ginger (optional) 1-2 tablespoons honey (depending on how sweet you like it) cinnamon (for sprinkling)
Place the oats, water, and salt in a medium saucepan. Bring to a boil, stirring occasionally. Reduce heat to low and simmer until thick and creamy, about 10 minutes. Remove from heat. Stir in the diced apples, walnuts, ginger and honey. Pour the oatmeal into serving bowls and lightly sprinkle with cinnamon. Serve immediately.
*Liquid Variations: - You can use cow’s milk or soymilk, in place of the water, for a creamer texture. Just be careful not to let the milk scorch on the bottom of the pan. You can prevent this by stirring often.
- You can also use two cups of steeped green tea instead of water to add in some extra antioxidants.
