Hawaiian Kabob Recipe

This is a great kabob recipe to use for summer gatherings or anytime you are in the mood to grill. My preferred protein choice for this recipe is chicken kabobs, but beef kabobs are just as tasty (as long as you like sweet beef). Also, play around with your choice of veggies depending on what is in season. I have used squash, zucchini, and onions in this kabob recipe as well.

Quick Shish Kebab History:
The original term “shish kebab” comes from Turkish words literally meaning “skewer” and “roast meat.” This meal originated in Turkey among nomadic tribes who sought out ways to prepare unusual meats. They marinated the meat to tenderize it, as well as mask the gamey flavor. Today, kebabs have become a part of many cultures. In Oriental cultures they are termed satay. The Japanese call them yakitori. In France, they are called brochettes.

Hawaiian Kabobs with grilled veggies

1 1/2 lbs boneless chicken breasts or beef, cut into 1 inch cubes
1 (15 1/4 ounce) can unsweetened pineapple chunks
1/2 cup soy sauce
1/4 cup vegetable oil
1 tablespoon brown sugar
1 teaspoon garlic powder
2 teaspoons ground ginger
1 teaspoon dry mustard
1/4 teaspoon fresh ground pepper
1 large green pepper, 1 inch pieces
12 medium mushrooms
18 cherry tomatoes
hot cooked brown rice

Put chicken in large shallow dish. Drain the pineapple, reserving 1/2 cup juice. Set pineapple aside. Mix juice with the next 7 ingredients in small pan. Bring to a boil. Reduce heat and simmer for 5 minutes. Pour the marinade over the chicken (reserve 1/3 cup for basting). Cover and chill for 1 hour.
Remove chicken from marinade. Alternate chicken, pineapple, green pepper, mushrooms, and tomatoes on skewers. Grill kabobs over hot coals 20 minutes or until chicken is done. Turn and baste frequently with marinade.
Serve over hot brown rice.

Quick Tip: If you are using wooden skewers, make sure to soak them in water for 30 minutes to prevent them from catching fire easily. If you start making kabobs on a regular basis, you might want to invest in some nice stainless steel skewers that can be reused.
