Summer Garden Pasta A flavorful healthy pasta recipe
Looking for a tasty way to use up those plentiful tomatoes and herbs in your garden? Then give this healthy pasta recipe a try. It is a great 30 minute meal and sure to win over your hungry crowd. The dill in this recipe gives it such a nice flavor, but feel free to use basil and oregano in it's place. They are always great additions to any healthy pasta recipe. If you want to add some protien to this dish, italian turkey sausage works nicely.
Summer Garden Pasta 4 Servings
2 tablespoons olive oil ¾ cup chopped green onions 3 ½ cups chopped mushrooms 3 cups chopped tomatoes 4 cups chopped spinach 1 tablespoon fresh dill 1 tablespoon onion powder 1 teaspoon garlic powder ½ tablespoon Creole seasoning (or sea salt) cooked whole grain pasta shells favorite cheese for garnish
Heat oil in a large skillet. Saute onions until tender. Add in mushrooms, tomatoes, and spinach. Cook until spinach has wilted down. Then add in dill, onion powder, garlic powder, and Creole seasoning. Cook for a couple minutes to blend flavors. Serve over pasta and garnish with cheese.
