Healthy Muffin Recipes

Here is where you will find healthy muffin recipes that my family loves for their flavor and I love for their nutrition. All of the muffin recipes listed here are made with whole grains, healthy fats and sweeteners, and lots of other nutritious extras. You will find sweet muffin recipes for breakfast and snack times. And also some savory recipes that will pair nicely with your next dinner.

Most of the healthy muffin recipes on this page are ones that I have discovered and changed to be healthy. I hope they inspire you to take your favorite muffin recipes and lighten them up. Sweet Muffin Recipes


  • Wholesome Bran Muffins
  • Oat Bran Muffins



Wholesome Bran Muffins

1 cup bran cereal (I use Ezekiel cereal)
2 egg whites or 1 egg, slightly beaten
3 tablespoons vegetable oil
3 tablespoons ground flax seeds
12 oz plain yogurt
1 teaspoon vanilla
1/4 cup honey
1 1/2 cups spelt flour or 1 1/3 cups whole wheat flour
1 1/4 teaspoons baking soda
1/4 teaspoon salt
1/2 cup blueberries or raspberries (can use dried fruit instead)

Preheat oven to 400 degrees.
Grease a 12 cup muffin tin. Place cereal in a ziploc bag and crush with a rolling pin or meat mallet.
In a medium bowl, combine egg, oil, flax meal, yogurt, vanilla, and honey. Add crushed cereal, flour, baking soda, and salt; stir just until dry ingredients are moistened. Gently stir in berries. Divide batter evenly among muffin cups, filling each 3/4 full.
Bake 18 to 20 minutes or until golden brown. Immediately remove muffins from pan.


Oat Bran Muffins

2 ½ cups oat bran
¼ cup finely chopped almonds
2 tsp baking powder
½ tsp salt
2 egg whites (or 1 egg)
¾ cup skim milk
½ cup honey or maple syrup
2 tbsp vegetable oil

Heat oven to 425 degrees. Coat 12 medium muffin cups with vegetable oil. Combine all dry ingredients, mix well. Blend liquids together, stirring slowly. Add egg whites. Add dry ingredients and stir until dry ingredients are moistened.

Divide batter evenly into prepared muffin cups.
Bake approximately 10-12 minutes until golden brown.

Variations:
1)add ½ cup finely chopped dates
2)add ½ cup of fruit of your choice
(increase baking time when do this)



Savory Muffin Recipes


  • Zucchini Basil Muffins

Zucchini Basil Muffins
1 cup spelt flour OR 1 cup minus 2 tablespoons whole wheat flour
2 tablespoons oat bran
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon pepper
2 tablespoons olive oil or rice bran oil
1 tablespoon unrefined sugar
1 large egg, beaten
1/4 cup buttermilk
1 cup coarsely grated zucchini
1/2 cup finely chopped fresh basil

Preheat the oven to 400 degrees F.
In a small bowl, mix together the whole wheat flour, oat bran, salt, baking soda, baking powder, and pepper. Set aside.
In a large bowl, mix together the olive oil and sugar. Add in the egg and buttermilk and mix until combined well. Stir in the zucchini and basil. Add the flour mixture to the wet mixture. Stir the batter until just combined.
Spoon the mixture into well-greased muffin tins. Bake the muffins for 18-20 minutes, or until a tester comes out clean.
Remove the muffins from the tins and let them cool on a wire rack. Return to the healthy baking section from these healthy muffin recipes
