Healthy Muffin Recipes

Here is where you will find healthy muffin recipes that my family loves for their flavor and I love for their nutrition. All of the muffin recipes listed here are made with whole grains, healthy fats and sweeteners, and lots of other nutritious extras. You will find sweet muffin recipes for breakfast and snack times. And also some savory recipes that will pair nicely with your next dinner.

Oat Bran Muffins

  • Zucchini Basil Muffins

Zucchini Basil Muffins
1 cup spelt flour OR 1 cup minus 2 tablespoons whole wheat flour
2 tablespoons oat bran
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon pepper
2 tablespoons olive oil or rice bran oil
1 tablespoon unrefined sugar
1 large egg, beaten
1/4 cup buttermilk
1 cup coarsely grated zucchini
1/2 cup finely chopped fresh basil

Preheat the oven to 400 degrees F.
In a small bowl, mix together the whole wheat flour, oat bran, salt, baking soda, baking powder, and pepper. Set aside.
In a large bowl, mix together the olive oil and sugar. Add in the egg and buttermilk and mix until combined well. Stir in the zucchini and basil. Add the flour mixture to the wet mixture. Stir the batter until just combined.
Spoon the mixture into well-greased muffin tins. Bake the muffins for 18-20 minutes, or until a tester comes out clean.
Remove the muffins from the tins and let them cool on a wire rack. Return to the healthy baking section from these healthy muffin recipes
