"Kitchen Sink Cookies"
Healthy Cookies with everything but the kitchen sink in them.

These healthy cookies are loaded with so much stuff that you will probably look at the ingredient list and wonder how on earth they could possibly turn out good. I was pleasantly surprised when I made them and continually turn to them when I want to make a super-good-for-you cookie.
These healthy treats have a great spicy flavor. If you prefer a milder cookie, cut the ground ginger down to ½ teaspoon and omit the crystallized ginger.

Kitchen Sink Cookies

¼ cup canola oil
¾ cup unsweetened applesauce
2 egg whites or 1 egg
½ cup frozen apple juice concentrate, thawed
½ cup whole grain hot cereal mix
1 cup spelt flour or whole wheat flour
1 tsp cinnamon
½ tsp all spice
1 tsp ground ginger
1 tbsp crystallized ginger, minced (optional)
1/4 tsp ground cloves
1 cup raisins (or carob or chocolate chips)*
¾ cup unrefined sugar
2 tbsp fresh orange juice
2 tbsp fresh lemon juice
½ cup unsweetened coconut
½ cup Grapenuts or Ezekiel Cereal mixed with 1 or 2 tbsp applesauce to create a thick slush)
3 cup rolled oats
1 tsp baking soda
3 tsp vanilla

Preheat the oven to 350 degrees F.
Combine all ingredients in a large bowl. Chill in the refrigerator for an hour or more to thicken the batter. Use a ¼ cup measuring cup or similar item to shape batter into small mounds. Place on cookie sheet sprayed with oil. These cookies will not spread so you can place them close to each other. Bake for 15 minutes.

Note: When I use chocolate chips, I like to buy the organic ones that have 65% cocoa or more. These have better sweeteners and the higher cocoa content makes them better for you.
