Healthy Cookie Recipes
My daughter and I love to bake cookies. As soon as I pull out my cookbook and browse through my healthy cookie recipes, my daughter is standing by my feet asking to be my helper. And I think we both get equally excited about taking out the 1st batch and eating them while they are still warm. And of course who doesn't love licking the spoon after all the cookies have been made. My other favorite part of baking cookies is making them healthy. That way my family can indulge in something sweet that is not full of overly processed ingredients and empty calories. It is my hope that the healthy cookie recipes that I have listed will help you enjoy doing the same. Banana Chocolate Chip Cookies
1 cup unrefined sugar ¼ cup applesauce 1 teaspoon vanilla 1 egg 1 teaspoon baking soda 3 large bananas 1 cup almond or peanut butter 1 cup spelt flour or whole wheat flour 1 cup oatmeal 1 cup raisins 1 cup carob or chocolate chips 1 cup pecans
In a large mixing bowl blend together unrefined sugar, butter, applesauce, vanilla, egg, and baking soda. Set aside. Place the bananas in a blender or food processor and puree. Add in the nut butter of our choice and blend until combined. Add the banana-nut butter mixture to the mixing bowl and mix until combined. In a separate bowl, combine flour, oatmeal, raisins, carob or chocolate chips, and pecans. Add the dry mixture to the wet mixture and mix well. Drop one full teaspoon at a time onto a greased cookie sheet. Bake at 375 degrees for 13 minutes.
