Chicken Parmesan Recipe

This Chicken Parmesan Recipe recieved rave reviews from my husband. He loved how moist and flavorful the chicken turned out. The reason it comes out so moist is because you cook the chicken in the pasta sauce. And since this chicken recipe is a easy 30 minute meal, you can use it on those nights when time is short.

EXTRA NUTRITION IDEAS:
To add some extra nutrition to this meal, try adding in some sliced bell peppers, mushrooms, broccoli, or other vegetables to the pan when you add the pasta sauce. I have even added pureed winter squash to the sauce to increase the nutrients without anyone even knowing.

Chicken Parmesan
30 minute meal
Serves 4


4 boneless skinless chicken breast halves
1 egg, beaten lightly
1/2 cup italian breadcrumbs
(or one slice whole wheat bread food processed until crumbs form and then mix in some Italian Seasoning and salt to taste)
1-2 tablespoons butter
1 3/4 cups prepared spaghetti sauce (homemade or bottled)
1/2 cup shredded mozzarella cheese
1 tablespoon parmesan cheese, freshly grated
1/4 cup fresh parsley, finely chopped
cooked whole wheat spaghetti

Put beaten egg into a rimmed plate. Set breadcrumbs in a second rimmed plate. Dip the chicken breast into the egg and then into the crumbs. Make sure to coat both sides of the chicken and shake off any excess.
In a large saucepan, melt the butter over medium heat. Add the chicken breast halves and brown on both sides (but do not cook all the way through).Pour the spaghetti sauce into the pan and reduce heat to low. Simmer until the chicken is cooked all the way through, about 10-20 minutes (depending on size and thickness of the chicken breasts).
Sprinkle with parsley and cheeses. Recover and simmer just until the cheese melts (about 5 minutes)
Serve with whole wheat spaghetti.

Note: You can also use chicken tenders for this recipe. Just decrease the cooking time.
