Quick White Bean Soup Recipe
This white bean soup recipe is on of my favorite lunch ideas. It's flavor will make you and your family feel like you're eating a gourmet meal. And how happy you will be knowing that it only took 15 minutes to prepare. It goes really well with a turkey and provolone sandwich or some whole wheat rolls.
Quick White Bean Soup Serves 2 2 teaspoons olive oil 2 scallions, thinly sliced 1 garlic clove, minced ½ teaspoon dried oregano 12 ounces vegetable broth 1 (19 ounce) can white beans, drained and rinsed 1 ½ teaspoons fresh lemon juice sea salt and ground pepper 2 tablespoons grated Parmesan
Heat the olive oil to medium heat in a small saucepan. Add in the scallions, garlic, and oregano. Cook, stirring often, until the scallions are tender, about 3 minutes. Stir in the vegetable broth and beans. Cook the soup until heated through, about 4 minutes. Use a large spoon to mash some of the beans to thicken the soup. Stir in the lemon juice and season with salt and pepper. Pour into serving bowls and sprinkle with Parmesan cheese. Nutritious add-ins: - handful thinly sliced spinach (added in when you stir in the beans and broth)
- handful diced carrots (added in with the scallions)
