Romaine and Avocado Salad with a Cilantro Lime Dressing
This Romaine and Avocado Salad is one of my absolute favorite recipes. And it is all because of the wonderful Cilantro Lime Dressing. It is one of those dressings that makes me crave a big bowl of tossed greens (how often can you say that?). And whenever I serve it to guests they always go back for seconds. Now the ingredients in this recipe are pretty minimal, so don't be afraid to add your favorite veggies to it. I have left it simple for use at dinner parties. When I have it for lunch I usually add more veggies to boost up the substance and nutrition.
I also consider this to be great mexican salad because of the cilantro lime flavor of the dressing. That is why I love pairing it with the
Smokey Tortilla Soup
and the
Black Bean and Chicken Quesadillas.

Romaine and Avocado Salad 1 bunch of Romaine lettuce, chopped 1-2 avocados, peeled and chopped 1-2 carrots, peeled into strips (use a carrot/potato peeler) 1 bell pepper, cut into thin strips (optional)
Cilantro Lime Dressing 1 tablespoon fresh cilantro 1/2 teaspoon minced garlic 1/4 teaspoon cumin 1/4 teaspoon crushed red pepper flakes 1/4 cup extra virgin olive oil 2 tablespoons honey 3 tablespoons fresh lime juice 1/4 cup orange juice
Whisk all ingredients together in a medium sized mixing bowl. Place the lettuce, avocados, carrots, and bell pepper in a large salad bowl. Add the dressing and toss to combine.
