Lemon Applesauce Cookies

These applesauce cookies are such a delicious treat. The lemon zest and cinnamon really give them a wonderful flavor. And boy are they nutritious. I have even eaten them in the morning when I needed breakfast on the go. I hope your family enjoys them as much as we do.

Lemon Applesauce Cookies

1/2 cup unrefined sugar
3 tablespoons butter, softened
3 tablespoons ground flax meal
1 tablespoon water
1/4 cup applesauce
1/4 teaspoon grated lemon rind
3/4 cup plus 2 tablespoons spelt flour OR just 3/4 cup whole wheat flour
2 tablespoons oat bran
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup chopped walnuts

Preheat the oven to 375 degrees F. In a medium-size mixing bowl, beat the sugar and butter together until combined well. Beat in the flax meal, water, applesauce, and lemon rind.
In a separate bowl, combine the whole wheat flour, oat bran, baking powder, baking soda, salt, and ground cinnamon. Combine the dry ingredients with the wet mixture. Fold in the chopped walnuts.
Drop teaspoonfuls of dough on a lightly greased cookie sheet. Space them about 2 inches apart to allow for spreading.
Baking the cookies for about 8-10 minutes, or until golden brown. Transfer to a wire rack to cool.
